                                  The legally prescribed water content in the honey must not exceed 20%. Honey from heather with 23% and baking honey from heather with 25% water content may deviate from this. For members of the German Beekeepers' Association (D.I.B), who want to sell the honey with the logo of the association, the water content must be below 18%.

                                  Manual Refractometer

                                  A manual refractometer is an analog laboratory or field instrument for measuring a refractive index (refractometry) of liquids. It works according to the critical angle principle, through which lenses and prisms project a shadow line onto a small glass reticle inside the instrument, which is displayed to the user through a magnifying eyepiece. Thus the concentration of a substance in a liquid can be measured very easily.
